 Grilled Goat Cheese Tortilla Sandwiches with Mango-Lime Salsa

Basically what you've got here is a real grilled cheese sandwich. Goat cheese melts well, and the smoky, crispy tortillas stuffed with the flavorful cheese and topped with a little mango salsa is a most tasty combination. These are easy to make, a good summer appetizer. You want to make sure the cheese melts before the tortillas burn, so the lower the fire, the better. If your fire is too hot, put the stuffed tortillas around the edges to cook.

  • 1 1/2 cups crumbled goat cheese
  • 1 tablespoon minced garlic
  • 1/4 cup roughly chopped fresh cilantro or parsley
  • 2 tablespoons minced canned chipotles
  • 1 tablespoon ground cumin
  • salt and freshly cracked black pepper to taste
  • 8 6-inch flour tortillas
  • Mango-Lime Salsa

  1. In a small bowl, combine the goat cheese, garlic, cilantro, chipotles, cumin, and salt and pepper to taste and mix well.
  2. Spread the goat cheese mixture onto 4 of the tortillas and top them with the remaining tortillas. Place the stuffed tortillas on the grill over a medium fire and cook until the cheese is melted and the tortillas are golden brown, 3 to 5minutes per side. Cut into eighths and serve with a generous helping of the Mango-Lime Salsa.

    Mango-Lime Salsa
  • 2 mangoes, peeled, pitted, and cut into bite-size chinks
  • 1 red onion, peeled and diced small
  • 1/2 red bell pepper, seeded and diced small
  • 1/3 cup fresh lime juice (about 2 large limes)
  • 1 jalapeno or other fresh chile pepper of your choice, minced
  • 1 tablespoon ground cumin
  • 3 tablespoons roughly chopped fresh cilantro or parsley
  • Salt and freshly racked black pepper to taste

In a medium bowl, combine all the ingredients and mix well. The salsa will keep, covered and refrigerated, for 2 days.
