What about a television show?

Norman Van Aken:
What about a television show? We are going to have one. It's going to be called Good Norman America. Just kidding. Television is something that -- what we'd want to do is present television just like the restaurant. Put the full story out there. I'm not going to do an infotainment show. I mean I might, but only in the most useful sense. I'm not going to do a sort of hee-haw cuisine show.

susan herskowitz:

Norman Van Aken:
Television is something I'm interested in, but I'm waiting for the best way to reach people in the way the restaurant has reached people: with real flavors and panache.

Brendan:
How do you incorporate the Cuban influence into your cuisine? Is it true you make a torpedo sandwich?

Norman Van Aken:
Torpedo? No. I will though, tonight, later. Is that like a submarine with attitude, or what?

Brendan:
Abandon ship!

FrederickCooke:
Well, time's just about up. Norman will answer one more question.

gourmand:
With all of this awareness and sophistication of exotic food, are there still any "undiscovered" cuisines that you think deserve recognition? How about African foods or the varied cuisines in the Indian subcontinent?

Norman Van Aken:
I think that when I look to the future, Africa and India particularly -- we'll find an astonishing amount of information from them. I'm looking forward to traveling there, eating there, learning and using those flavors.
