Play of Italian cooking:
To make pasta with tomato sauce, set 2 lbs. of perfect plum tomatoes,
halved, in a sauce pan, alone, no oil, no water, nothing. Simmer until
soft, then grind until smooth. Tear a bunch of fresh basil into large
pieces, and put on the bottom of a serving dish, put hot pasta, touched
with the finest olive oil on the fresh basil, and pour the tomatoes on
top.
