- Miso Soup
- Dashi and miso are the basic
ingredients of this cloudy broth. Often, the hot broth is poured
over noodles, mushroom slices, seaweed,
or any number of soup ingredients.
- Hiyamugi with Shrimp and Shiitake Mushrooms
- This dish is served cold -- thin noodles are topped with
boiled or steamed mushrooms, shrimp and omelet. It is
accompanied by a mirin and soy-based dipping sauce.
- Spinach with Sesame Seed Dressing
- A classic, cool vegetable, where steamed spinach is dressed
with a soy and dashi (an indispensible stock made with bonito
flakes and seaweed) dressing enhanced by crushed, toasted sesame
seeds.
- Tempura Soba
- A soup of broth and soba (buckwheat noodles) is topped with
deep-fried batter-dipped shrimp or vegetables.
- Tori Nanban
- Udon noodles, scallions, and chicken are lightly cooked in a
soy broth.
- Yuzendofu (Sole with Tofu)
- A paste is made with the tofu and fish that is steamed into a
loaf with Shitake mushrooms and other vegetables. The loaf is
sliced and served with a bowl of Mirin (sweet rice wine) and
ginger sauce.
- Zarusoba
- This dish combines cooked buckwheat noodles (soba) with a
topping of nori (a type of seaweed). It is that simple. Beside
this dish one might put a garnish of scallions and wasabi, and a
dipping sauce that combines mirin, soy
sauce , dashi and bonito flakes.
