Some Japanese Dishes

Miso Soup
Dashi and miso are the basic ingredients of this cloudy broth. Often, the hot broth is poured over noodles, mushroom slices, seaweed, or any number of soup ingredients.

Hiyamugi with Shrimp and Shiitake Mushrooms
This dish is served cold -- thin noodles are topped with boiled or steamed mushrooms, shrimp and omelet. It is accompanied by a mirin and soy-based dipping sauce.

Spinach with Sesame Seed Dressing
A classic, cool vegetable, where steamed spinach is dressed with a soy and dashi (an indispensible stock made with bonito flakes and seaweed) dressing enhanced by crushed, toasted sesame seeds.

Tempura Soba
A soup of broth and soba (buckwheat noodles) is topped with deep-fried batter-dipped shrimp or vegetables.

Tori Nanban
Udon noodles, scallions, and chicken are lightly cooked in a soy broth.

Yuzendofu (Sole with Tofu)
A paste is made with the tofu and fish that is steamed into a loaf with Shitake mushrooms and other vegetables. The loaf is sliced and served with a bowl of Mirin (sweet rice wine) and ginger sauce.

Zarusoba
This dish combines cooked buckwheat noodles (soba) with a topping of nori (a type of seaweed). It is that simple. Beside this dish one might put a garnish of scallions and wasabi, and a dipping sauce that combines mirin, soy sauce , dashi and bonito flakes.
